The blade should not be too hard that it eventually becomes brittle. There are many options for the handle. Most hunters feel that as long as it feels good in their hand then the material is secondary.

However, many hunters still prefer their handle choice for folding hunting knives. There are many different choices when it comes to the type of material used for the handle. Some of the more well known materials used for handles include ivory, bone, aluminum, horn, plastic, wood and leather. More important than the material is the shape and feel in your hand. Some hunters prefer a finger guard while others do not; it is a matter of preference.
